The 52100 grade steel is used to manufacture industrial cutters, automotive and aircraft components as it known for exceptional hardness, strength, and wear resistance. Treated with a liquid nitrogen cryogenic stage during steel hardening for maximum performance. Carbon steel holds a very fine durable edge but will patina and should be dry stored when not in use. The Gyuto style blade is great for all round general use and features a concave “S-grind” to reduce surface area and improve food release.
