Forged from 52100 carbon steel for the cutting edge with stainless/nickel cladding. 52100 is used to manufacture industrial cutters, automotive and aircraft components as it has great toughness and durability. Carbon steel holds a very fine durable edge but will patina and should be dry stored when not in use. The gyuto style blade is great for covering most tasks in the kitchen and features a concave “S-grind” to reduce surface area and improve food release. The handle wood has been stabilized in a resin to resist moisture and increase durability.
