Forged from carbon steel in a multi bar twisted pattern Damascus. High polished steel for extra contrast. Carbon steel holds a very fine durable edge but will patina and should be dry stored when not in use. The Gyuto style blade is great for most tasks in the kitchen and features a concave “S-grind” to reduce surface area and improve food release. The handle features multi tone amboyna burl and ancient bog oak which have both been stabilized in a special resin to increase durability and moisture resistance.
