K tip 52100 Edge Stainless Clad

Forged from 52100 carbon steel for the cutting edge with stainless 420/nickel cladding. 52100 is used to manufacture industrial cutters, automotive and aircraft components. Carbon steel holds a very fine durable edge but will patina and should be dry stored when not in use, the protective stainless sides will not tarnish. The gyuto style blade is great for all round general use and features a concave “S-grind” to reduce surface area and improve food release. The handle wood has been stabilized in a resin to resist moisture and increase durability.
